Moussaka

Moussaka is as sacred to the Cypriots as lasagna is to the Italians. It is a main dish that mainly consists of eggplants, beef (or lamb) meat, spices, and cheese. All the ingredients are carefully layered over the oven base, topped with Béchamel sauce, and baked until golden. It is very important to peel the eggplants and sprinkle them with salt before starting to cook moussaka.
